In honour of The British Nutritional Foundation’s Healthy Eating Week here are three RYH recipe giveaways to help you get your gut back on track!!
Breakfast – Reset Your Health Granola
Our first recipe giveaway is this nutritious granola – perfect for setting you up for the day.
Ingredients:
180g oats, gluten free
90g coconut chips / curls
90g walnuts
45g almonds, flaked
45g sunflower seeds
45g pumpkin seeds
3tbsp coconut oil
6 tsp ground cinnamon
3 tsp ground ginger
1 tsp vanilla extract
a pinch of salt flakes
Instructions
- Preheat the oven to 180°C
- Mix the oats, coconut chips, nuts and seeds in a bowl with the pinch of salt
- In a small pan melt the coconut oil with the cinnamon, ginger and vanilla then pour into the dry ingredients and mix everything together thoroughly or in a mixer if available
- Spread out evenly on a baking tray and bake for 25 minutes, stirring a few times
- Let it cool, then once at room temperature. Store in an airtight container. It will last in there for a couple of weeks.
- Serve 80g granola per person with a helping of kefir for a delicious breakfast!
Lunch – Beetroot & butternut with cashew cream
Our second recipe giveaway is this scrummy salad.
Serves 2
Ingredients
2 tbsp olive oil
½ tsp ground cumin
½ tsp chilli flakes
Salt flakes
½ small butternut squash, peeled and thinly sliced (200g prepared weight)
2 large raw beetroots, peeled and cut into wedges (200g)
50g cashew nuts
1 small onion, peeled and roughly chopped
½ lemon, juice only
60g rocket, washed and dried
30g pumpkin seeds
1 avocado, peeled and sliced away from the stone
Instructions
- Preheat the oven to 180°C
- Place the oil, spices and salt into a small bowl and mix. Place the butternut squash into a bowl and massage with half of the spiced oil and lay on a non-stick oven tray. Repeat with the beetroot and roast both side by side for 25 minutes or until the butternut slices are just going brown in areas
- To make the cashew nut cream place the cashew nuts into a large pan with the onion and 250ml water and bring to the boil for 10 minutes. Transfer the mixture and cooking water with ½ tsp salt and the lemon juice to a high-speed blender or mini chopper and blitz for 2 minutes on high until really smooth and creamy
- Serve the salad warm or cold by arranging the rocket on plates and sprinkle with pumpkin seeds, add the roasted vegetables, avocado and drizzle with the cashew nut cream
Dinner recipe giveaway – Dover Sole with Bombay Sweet Potato
Serves 2
And for our third recipe giveaway, we have this delicious dover sole with super tasty potatoes.
Ingredients
For the Bombay sweet potatoes
2 tbsp coconut oil
1 onion, peeled and finely diced
2cm ginger, peeled and grated
2 cloves garlic, peeled and grated
5g fresh coriander, stalks finely chopped leaves reserved for garnish
1 tsp mustard seeds
1 tsp ground cumin
½ tsp turmeric
100g fresh tomatoes, roughly chopped
Salt flakes and freshly ground black pepper
250g sweet potatoes, peeled and cut into 1cm cubes
80g baby spinach leaves
For the fish
25 unsalted butter
2 dover sole fillets, line caught (or a white fish of your choice)
2 tbsp capers
Instructions
- Over a low heat melt the oil in a heavy bottomed pan and soften the onion, ginger, garlic, coriander stalks for 5 minutes. Increase the heat and add the mustard seeds, cumin, turmeric, tomatoes; season and cook for 5 more minutes
- Add the sweet potato and a splash of water stir and cover with a lid. Turn the heat to the lowest setting for 10 minutes. Stir in the spinach to wilt for the last 2 minutes
- Meanwhile pat the fish dry with kitchen paper. Melt half of the butter in a large shallow non-stick frying pan and once bubbling add the fish skin side down. Season the flesh side with salt and pepper in the pan; cook for 3 minutes then carefully turn the fish over to cook for a further 2 minutes. Add the remaining butter and capers to the pan to heat though and spoon over the fish
- Serve the potatoes topped with the fish and spoon over the caper butter
